Starbucks Oat Fudge Bars

Here's how to make them!

 

Ingredients:

  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 cup butter
  • 2 eggs
  • 2 cups flour
  • 1 teaspoon baking soda
  • 3 cups oats
  • 1 cup sweetened condensed milk (just less than one full can)
  • 2 cups chocolate chips
  • ½ cup butter
  • 1 teaspoon vanilla

Directions: Preheat oven to 350 degrees Fahrenheit. In a stand mixer, cream butter sugars. Add the eggs. Mix the flour, baking soda, and oats, then slowly combine with egg mixture. Spread ¾ of the oat dough into a 9-inch-by-13-inch rectangular baking pan, using a spoon to spread to the edges.

In a pot on medium-low heat, melt together the sweetened condensed milk, chocolate chips, butter, and vanilla. Pour and spread this over the layer of oat dough. Top with the remaining oats, dropping in clumps over the chocolate. Bake for 25 minutes, then cool and freeze before cutting into squares.

 

Rainbow Cupcakes

What you'll need

  • White cake mix (we used an 18-1/4-ounce box)
  • Food coloring (red, blue, green, and yellow)
  • Baking cups
  • Whipped cream (optional)

How to make it

  1. Prepare your favorite white cake mix, then divide the batter evenly among six small bowls. Following the chart below, dye each bowl of batter a rainbow color.

    RAINBOW COLOR DROPS OF FOOD COLORING
    Purple 9 red and 6 blue drops
    Blue 12 drops
    Green 12 drops
    Yellow 12 drops
    Orange 12 yellow and 4 red drops
    Red 18 drops


  2. Line 16 muffin pan wells with baking cups. Evenly distribute the purple batter among the cups, then the blue, and so on, following the order shown. As you go, gently spread each layer of batter with the back of a spoon to cover the color underneath.

  3. Bake the cupcakes according to your recipe directions. Before serving, remove the paper wrapping, and if you like, top each cupcake with a whipped-cream cloud.

Cheesy Taco Casserole

We were recently given the chance to try out one of McCormick's amazing homemade recipes. We chose Taco Casserole from McCormick.com. My son Cam is sometimes a picky eater, so I was hoping he was going to love this recipe. And he did! Tacos are a family staple in our home, but my son always just wants cheese and meat. Sometimes he'll be ok with lettuce too, but not always. This recipe was perfect for sneaking in some extra healthy ingredients with the beans, which are a great source of protein.

Directions

  1. Preheat oven to 400°F. Brown meat in large skillet on medium-high heat. Drain fat.
  2. Stir in Seasoning Mix, beans, tomato sauce and corn. Bring to boil. Reduce heat to low; simmer 5 minutes. Spoon into 2-quart baking dish. Sprinkle with cheese and tortilla chips.
  3. Bake 5 to 10 minutes or until cheese is melted. Serve with assorted toppings, if desired.

 

Chocolate Trifle

I made this dessert for Christmas dessert, everyone loved it!

pkg.  (2-layer size) chocolate cake mix
1
qt.  (4 cups) cold milk
2
pkg.  (4-serving size each) JELL-O Chocolate Instant Pudding
1
tub  (8 oz.) COOL WHIP Whipped Topping, thawed

pkg.  (1.4 oz. each) chocolate-covered toffee bars, crushed

make it 

PREPARE cake batter and bake in 13x9-inch baking pan as directed on package. Cool completely on wire rack. Cut into 1/2-inch cubes.

ADD milk to dry pudding mix in medium bowl. Beat with wire whisk 2 minutes or until well blended.

LAYER half each of the cake cubes, pudding, whipped topping and crushed chocolate bars in large glass trifle bowl. Repeat all layers. Serve immediately or cover and refrigerate until ready to serve.

Christmas Morning Breakfast Casserole

This is one of those recipes I make every year for Christmas breakfast. It is so easy to make and such a hit in our home. 

You will need:

 

  • Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside. Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking dish. 

Pour mixture over crescent rolls. 

Bake 25 to 30 minutes in the preheated oven, or until a knife inserted in the center comes out clean. Enjoy!
